Lemon Garlic Salmon Pasta

Ingredients:

SALMON

• 1lb salmon (skinless & boneless) – ButcherBox

• 2 garlic cloves finely sliced

• 4 tbsp unsalted butter

• 1 tbsp olive oil

• 3 tbsp lemon juice

• Salt & pepper

• Cilantro or parsley (optional)

PASTA

• ½ lb fettuccine or other pasta (we also use spaghetti squash or Banza)

• ¼ cup finely chopped dill + parsley combo (can just use one of them as well)

FINISHING

• Lemon juice

• Salt & pepper

• Parmesan cheese

DIRECTIONS:

1. Preheat oven to 400 degrees. Use olive oil or avocado oil spray to coat a small baking dish.

2. Place salmon in and sprinkle both sides with salt & pepper. Top the salmon with butter & garlic. Drizzle over lemon juice & olive oil.

3. Bake for 14 minutes or just until salmon is cooked through.

4. While salmon is cooking, boil water and cook pasta. Finely chop your dill & parsley.

5. Remove salmon from oven, let cool for a few minutes & then flake into large chunks.

6. Add pasta & herbs into the pan with the salmon. Toss gently to coat pasta with pan juices.

7. Immediately serve & finish with lemon juice, parmesan, & salt/pepper if needed.
